Conservas Olasagasti is a long-established family business with over 130 years of history, dating back to the late 19th century. The story begins with Salvatore Orlando, a Sicilian who settled in Getaria (Gipuzkoa) in the Spanish Basque Country and married a Basque woman named Simona Olasagasti. In 1920, Salvatore Orlando founded one of the first salt-curing fish factories and established himself as one of the leading producers of Cantabrian anchovies. He was one of the Italian pioneers who introduced centuries-old salt-curing techniques to the Cantabrian coast.

The company specialises in producing and semi-preserving the highest-quality fish, particularly Bonito del Norte (albacore tuna), anchovy fillets, bluefin tuna, and Cantabrian mackerel, all prepared using traditional artisanal methods. Its main products include Bonito del Norte prepared in various ways, Cantabrian anchovies, widely considered to be the best in the world, and tuna and mackerel fillets in organic olive oil.

The company continues to use the traditional artisanal fish-preserving methods passed down since the 1920s. During the main season from late March to early June, the fish are caught by small boats in the Cantabrian Sea near San Sebastián.
