Craftsmanship & indulgence: Only pieces of ventresca (the belly fillet) from yellowfin tuna (Yellowfin) are used for this delicacy. Among connoisseurs, ventresca is considered the finest cut of the fish, as it is particularly rich in fat and therefore has an incomparably tender, almost butter-soft texture.
