The good reputation of the Basque pie far precedes it, because the Basques have spread themselves and their meat tradition all over the world.
Basque pie is lighter than many other traditional country pies because it contains less fat. It owes its special taste to the Piment d'Espelette and the use of the so-called "goulat", a very low-fat and tasty part of the pork belly.
In combination with fine pork liver, this results in a creamy and aromatic unit that inspires immediately. Rustic awesome.
