Cod in a truffle jacket: Miss Can elevates the classic Bacalhau tin with olive oil and truffle.
Miss Can, from Lisbon, includes this tin in its “Truffled Olive Oil” range—the premium alternative to classic Bacalhau in olive oil. As with all Miss Can tins, it is filled by hand at Largo do Contador Mor in the Castelo district.
The cod remains firm, while the olive oil has an earthy, spicy truffle note that is much more pronounced than in simpler Bacalhau varieties. It is seasoned only with salt and contains no artificial colours or preservatives. With 23 g of protein per tin, it is also very high in protein.
Production: As with most Miss Can varieties, only the fish does not come from the Portuguese coast; it is purchased from elsewhere, as is customary almost everywhere in Portugal. The truffle oil is added before the tin is filled by hand.
Enjoy it plain on toasted bread, or serve it over creamy mashed potatoes or scrambled eggs. Pair it with a full-bodied white wine from the Douro or Alentejo.
