A fine piece of Andalusian fishing tradition. The Albacora (also known as Bacoreta or false bonito) is the latest gourmet highlight from the venerable Conservera de Tarifa manufactory. An exceptional fine fish that impresses with its deep red color, fine-grained texture, and incomparably intense aroma.
Craftsmanship & enjoyment: Only the species Euthynnus alletteratus is used for this exclusive conserve. Its flesh combines the subtle elegance of the melva with the powerful, rounded structure of classic red tuna in a perfect way. To create this masterpiece, the fillets are carefully selected in the Andalusian almadrabas after being caught, gently cleaned and cut by hand, and cooked with particular care to preserve their natural juiciness.
The fine pieces are then carefully layered by hand into the distinctive glass jar by the manufactory's experienced master women and covered with the finest olive oil. The glass is not only a symbol of absolute transparency and premium quality, but also allows the beautiful color of the fish to shine. Inside, the olive oil acts as a flavor catalyst, giving the fish even more volume and suppleness without distorting its natural, characterful own flavor.
Tip for connoisseurs: Take your time with this top-quality product! The Albacora works wonderfully when served slightly chilled on a fine, light bed of vegetables, refined with a few drops of citrus fruit or fresh herbs. Even purely on a piece of neutral sourdough bread, this fish unfolds its full, lingering aromaticity on the palate.
