Olives de Nyons (Tanche) AOP carry the protected designation of origin and are a specialty of Provence. They are marinated in a brine with stones and then dry-cured. Their flavor is exceptionally spicy and intense, making them not only excellent as an aperitif olive, but also highly versatile in the kitchen.
