Tricana has been the brand of Conserveira de Lisboa since 1942, just a few steps behind the Praça do Comércio. The cans are packed by hand there and wrapped in printed paper.
Four ingredients are listed on the label: sardines, olive oil, pepper, salt. Compared to the house's simple sardine in oil, so exactly one ingredient is added, and yet it changes the character of the can. The fish are caught off the Portuguese coast.
Pepper is the other kind of heat. It doesn't burn like piri-piri, but rather settles aromatically over the fish, woody and slightly resinous, and lets the sardine flavor stand underneath. Anyone who finds the Tricana with piri-piri too direct is better off here.
On bread, without any other ingredients, because the pepper takes on the role that would otherwise be filled by the pepper mill at the table. Also good over hot potatoes or in a potato salad, where the oil spreads. With that, a Vinho Verde or a beer.
