For this Galician delicacy, Ramon Peña selects the best small sardines from the Rias Galegas directly at the port of Vigo or Pontevedra.
After cleaning (removing the head and gutting), the sardines are grilled and toasted and filled into the cans by hand. All that is added are the Pimientos de Padrón, a pinch of salt and the finest olive oil. All this within a few hours after the fishing boats land in the port, for even more freshness!
The Pimientos (small green peppers) come from small farms in the immediate surroundings of the small famous town of Padrón – hence the name.
It hardly gets more Galician!
At Ramón Peña, everything is lovingly handcrafted – right down to packaging the can.
These sardines are excellent for tapas and mixed appetizer platters, but also taste wonderful with pasta, rice, on pizza, or in a salad.
