In Lisbon, Tricana packs mackerel fillets in olive oil and adds lemon. These are fillets, not whole fish, placed side by side in the shallow tin. When you open the tin, you see silvery-grey strips beneath a clear layer of oil, and the lemon is immediately apparent. In Lisbon, this version is usually only available in the small grocery store on Praça do Comércio.
Mackerel is the strongest of the three fish that Tricana packs in tins: fattier than tuna, darker in flavour than sardines. That is precisely why the lemon works so well here. It cuts through the richness of the fish without overpowering it, turning a filling tin into something you will happily eat in summer too. Compared to the plain olive oil version, it is the lighter choice; compared to the piri-piri tin, the milder.
Caught, filleted and packed in the tin on the very same day: Tricana uses the traditional Portuguese method, in which the fish is packed raw and cooked only inside the sealed tin. This keeps the juices in the fish rather than in the cooking water. It is preserved using only olive oil and salt.
Serve the fillets on toasted bread with a little fleur de sel, or fold them into boiled potatoes and onion rings to make a salad. Serve with a glass of well-chilled Vinho Verde. Stand the tin upright for a short time before opening so that the oil collects at the bottom.
