Tricana has been the brand of Conserveira de Lisboa since 1942, located on Rua dos Bacalhoeiros, the street of the cod merchants. Every can is wrapped by hand in printed paper there, here in red with Tricana in a black cloak, the motif that gave the brand its name.
The sardines are caught off the Portuguese coast and preserved in sunflower oil, with tomato, vinegar, spices, and salt. It is the same can as the spicy sister from the same house, just without the piri-piri. Those who like sardines in tomato but want to avoid the heat will reach for this one.
It is the vinegar that prevents the sauce from becoming sweet, as tomato sardines often are. It keeps the tomato lean and lets the fish take center stage, and because no olive oil is involved, no flavor from that is added either. What remains is sardine with tomato, without compromise.
Cold on toasted bread, or warm over rice. In Portugal, boiled potatoes and a hard-boiled egg are often added, and then it is a lunch. A Vinho Verde suits it, a beer just as well.
