Canned fish is an integral part of the culinary culture in France, Spain, and Portugal. It combines shelf life with artisanal processing.
The focus of this evening is on sardines, mackerel, and tuna, complemented by mussels, squid, and other seafood. The fish is processed shortly after being caught and preserved immediately—usually in olive oil, occasionally in water or wine, either plain or with a wide variety of exciting recipes.
Away from the coast, cans can be a great way to incorporate high-quality fish into our everyday lives regularly and conveniently. The focus of this evening is on canned goods; to ensure you don't run dry, a rosé, white wine, and red wine are available as accompaniments.
