For Big Peat, Sauces Martin teamed up with the Scottish whisky house Douglas Laing. Their Big Peat is a whisky from the island of Islay, known for its strong peaty smoke, and there is no shortage of it in the bottle. The label features Pete, a wind-swept islander.
Habanero brings fruit and heat, Picaro balances it out, and the whisky adds peat and malt. It tastes more like a campfire than vinegar. On the Martin scale, this is level 6 out of 12: distinctly hot, but nothing to fear.
Sauces Martin is an independent sauce manufacturer from Viroflay near Paris, founded by the three cousins Anna, Jean-Baptiste and Benjamin Martin. Their chillies are harvested when ripe, cleaned by hand and aged as a purée in barrels for around a year before being turned into sauce. Go to the supplier profile
Pairs well with burgers, grilled meat, fish and chips or raclette, and for those who like it Scottish, haggis. It is best added at the end or directly to the plate, so that the whisky aroma is preserved. Store in the refrigerator after opening. The sauce contains alcohol and is not suitable for children or pregnant women.
