The roe is gently cooked, carefully cleaned, and hand-cut into fine medallions by the master craftswomen of the manufactory. This preserves the perfect texture. It is marinated in high-quality, cold-pressed extra virgin olive oil, which is enhanced with a guindilla (chili pepper).
The result is a wonderfully grainy texture and a distinctive taste of the sea, elegantly elevated by the subtle spiciness. Enjoy the medallions on their own as a fine aperitif with a good glass of white wine, or use them as a creative highlight in salads, pasta dishes, or even homemade sushi.
