The Picholine Olive is a French variety of olive grown mainly in the Gard region of southern France.

It has a characteristic elongated, pointed shape and is green to golden in colour.

The Picholine Olive has a crisp, slightly salty flavor with hints of almonds and is often used as a table olive or as an ingredient in various dishes.

It is also suitable for the production of olive oil, valued for its delicate fruitiness and low acidity.

The Picholine Olive is a Protected Geographical Indication (PGI) in France and is appreciated by gourmets around the world.

We added a sprig of fennel to the brine to give the olive a subtle hint of fennel without overpowering the flavor of the fruit.

What is the difference between black, green and purple olives?
It is always the same fruit but at different degrees of ripeness.
The green olive is actually not yet ripe, but has reached its final size. It is harvested before ripening begins. The black olive is fully ripe on the tree and the purple olives are right in between. Their color spectrum goes from dark green to pale pink to dark violet.

Ingredients: Green olives (Lucques or Picholines) and black Lucques olives 56%, water, hot peppers, salt, tomato paste and onions, allspice 0.8%, vinegar, spices, herbs, citric acid.
