The choice of raw materials is made by quality and local producers: Ossau-Iraty PDO sheep cheese is made a few kilometers from the biscuit factory, the flour comes from a local mill and the chilies obviously come from Espelette.
Okina biscuits contain no preservatives, colorings or palm oil.
