Tudela artichoke from Navarre - half hearts

Alcachofa (Artichoke) de Tudela is grown on terraces near the Ebro, Ega and Aragón rivers, on soils characterized by medium grain, rich in limestone and free of stones. The climate, characterized by cold winters and mild springs, has made it possible to obtain a very good quality product.

The quality of this exquisite product is characterized by the pleasant and delicate natural taste of the artichoke and it has no acidity at all.

The production of Alcachofa de Tudela PGI dates back to the Middle Ages, more precisely to the period of Muslim rule, and is closely linked to local traditions. Until the last century, it was sold canned only in local markets. The development of the canning industry has given new impetus to the expansion of artichoke cultivation, which now accounts for a large percentage of the area under Navarre vegetables.

Artichokes marketed in preserved form, whole hearts or in halves, must not be acidified and the final product must have a pH of at least 5.0, equivalent to that of the fresh product.
