Tuna belly is a rare and extremely delicious specialty. This is the belly part – the fattiest and richest part of the fish, which is even more tender than regular tuna fillets. It contains a particularly large amount of the famous omega-3 fatty acids, which are so valuable for our health!
The long fillet pieces are perfect for salads, tapas or other hot or cold dishes. Combine it, for example, with pink pepper and dill, Piment d'Espelette, some fleur de sel and some chives. Bon Appetit!
As always, fantastic handwork from our Basque supplier Jean de Luz.
The tuna belly is so rare that there is only 4kg for a 100KG tuna. The tuna are caught in small batches in the Bay of Biscay, with the fishermen being careful to respect the fish's reproductive cycle.
