Terrine with Porc Noir de Bigorre ham

This traditional terrine is melt-in-your-mouth and extremely tasty. The meat used is Porc Noir de Bigorre (black pig from the Pyrenees) and gives it its characteristic intense taste.

This new product contains 20% Jambon (ham) of Porc Noir de Bigorre.

Serve the terrine at room temperature and enjoy it on its own, on toasted farmer's bread or toast as an aperitif or as part of a mixed platter.

    Le Porc Noir de Bigorre

    In 1981, the Noir de Bigorre breed of pig was almost extinct. It owes its revival to a handful of breeders in the Hautes Pyrénées region who, out of respect and attachment to the family and regional heritage, made it their goal to preserve the breed.

    The black pigs are bred in the Bigorre region in the heart of the Pyrenees according to strict regulations and are characterized by an incomparably melting, tasty meat with a bright red colour.

    Sehr kräftiger Geschmack, viel Leber, wenig Schinken

    Wir hatten schon einmal Terrine vom Porc Noir, die war sehr lecker. Die Verbindung mit Schinken klang sehr verlockend, also mitbestellt. Das Ergebnis ist allerdings nicht das, was wir uns vorgestellt hatten. Handwerklich sehr gut gemacht, geschmacklich ist die enthaltene Leber sehr dominant im Vordergrund, Schinken kommt leider gar nicht heraus, bei einer Blindverkostung hätte ich das Produkt eindeutig mit Wild(leber) in Verbindung gebracht. Wir sind ein bisschen enttäuscht, aber es war einen Versuch wert.
