IGP Saucisson de l'Ardèche: Pigs fed with at least 60% grain without added growth hormones, fresh, cured meat, only fine cuts, natural casing.

    Teyssier Salaisons, founded in Saint-Agrève in 1871, is a renowned French company known for the production of ham and dried sausages. Originally a small butcher's shop, Teyssier has dedicated itself to the Ardèche salting tradition and built up know-how over the generations.

    The company is deeply rooted in the Ardèche terroir and contributes to the local economy. They mainly use fresh meat of French origin and their products are aged at 1100 m altitude in the Monts d'Ardèche Regional Natural Park.

    Teyssier is one of the last large curing companies in France and was awarded the "Entreprise du Patrimoine Vivant" (living cultural heritage company) label in 2012 and 2017. They stick to traditional techniques, such as manual salting, drying on wooden frames and stuffing in natural casings, and combine these with innovations to develop new recipes.

    The company values ​​quality and complies with strict controls and regulations, including HACCP studies and traceability from farm to consumer. Its products have won multiple awards and have had the protected geographical indication “Ardèche” since July 2012.

    Teyssier Salaisons has also had success in competition, winning 32 medals at the Concours Général Agricole since 2008, as well as other awards in various competitions.

    * Paring on the table and with the knife, then pre-salting the meat
    * Crushing to 5 mm with 100% natural ingredients
    * Stuffing in natural casing, with a string and closed by hand
    * Pre-cook and then leave to mature for 4 weeks in an open circuit (outside air) at an altitude of 1136 m.
    * Dimensions (as a guide): 54mm diameter, 160mm length
    * Store in a cool, dry and ventilated place.
    * Recommended temperature below 20°C, ideally: 16°C.
    * Product tends to dry out.
    * After opening, store in the refrigerator and use quickly.

    Interesting facts about our Saucissons Secs

    Saucisson sec means nothing other than “dry sausage”. Our selection of saucissons secs are made exclusively in natural casings, air-dried and not smoked. With noble mold, saucissons secs are significantly milder and sweeter than German raw sausage types, which tend to be more sour.

    Saucissons secs or salamis (in German “permanent sausage”) are preserved by spraying them with a certain mold culture (a penicillium, similar to that in Camembert). This good and intentional mold prevents bad mold from spreading on the sausage. This good mold can sometimes develop greenish spots (such as in ripened goat cheese), but it has not gone bad and the product can still be consumed safely. But since this doesn't look so nice, you should brush the sausages regularly, preferably with a vegetable brush.

    If your saucisson sec is still too soft for you, we recommend hanging it in a dark, dry and well-ventilated place until it reaches the desired hardness.
