Anchois façon sardine – anchovies like sardines, filleted and preserved in extra virgin olive oil.

These anchovy fillets are a real surprise. Unlike the well-known dried and very salty anchovy fillets, these are preserved like sardine fillets. That means they are fried in oil (head, tail and intestines removed), drained and carefully canned by hand. They are then covered in Vierge Extra Olive Oil and seasoned with Piment d'Espelette and just a pinch of salt. The flesh of these anchovies is firmer and their flavor stronger, and because they've been preserved in olive oil like sardines, they don't taste salty like regular anchovies.

”Les Mouettes d'Arvor” is the premium brand of Conserverie Gonidec, a family business founded in 1959 and now managed by husband and wife team Jacques and Valérie Gonidec. Gonidec is the only company in Concarneau that still makes its canned fish the traditional way. The fish (sardines, mackerel, tuna, anchovies) are caught off the Brittany coast, carefully selected, transported to the factory overnight and immediately processed there. There they are cleaned by hand and sorted by size, then fried in oil and placed in the cans by hand.

This traditional production gives the fish an incredible aroma and firm flesh. With the exquisite combination of quality, taste and tradition, "Les Mouettes d'Arvor" have enjoyed a high reputation for 50 years.

Each year, the company releases several specially designed vintage sardine tins that are coveted by collectors.

Details

The anchovy is the little sister of the sardine (both belong to the herring family). It is characterized by its darker, tender meat. To keep it from spoiling, it is often aged in brine. The preparation like sardines is a rare delicacy and a completely different taste experience!

The anchovy contains unsaturated omega-3 fats, iron and vitamin B12.
