A rouille is a creamy sauce, similar to mayonnaise, with lots of garlic and red pepper and/or saffron, which traditionally accompanies bouillabaisse and other fish soups and dishes.
The name Rouille (French: rust) refers to its yellow-red color. It is usually served on a slice of white bread rubbed with garlic (and often toasted).
