Story:
Julien Braun, the founder of Poisson d'Ouest, is not, as his name suggests, a native of Breton. The passionate cook comes from Alsace, but he is drawn to the rough landscapes around Douarnenez and Roscoff. That's why he settled in Brittany in 2000 and worked as a chef in various restaurants for the first five years. He quickly recognized the enormous culinary potential of the fresh local fish and seafood and decided to turn it into his own business: an artisan "mini fish conservatory" called "Mer-Terroir-Tradition" and based in Quimper. For 10 years he ran the Conserverie almost single-handedly, gained valuable experience and made a very good name for himself, especially with the local fishermen, who were always the first to deliver their best goods to him.
2015 was a year of upheaval: Julien changed the name of his brand to "Poisson d'Ouest" and modernized everything from operations and recipes to packaging and design. A little later he could hardly save himself from inquiries from the best delicatessen shops. Julien is now known and loved all over France with its fish specialties.
