Maison Marthe is a canned fish factory and restaurant located in the port of La Côtinière on the island of Oléron.
The project is divided into two. An artisan workshop where fresh products and preserves are made and a restaurant, Villa Marthe, where, in the summer season, the products are offered for tasting.
We make preserves inspired by local recipes but updated for a demanding clientele that loves good products.
With around 100 boats and around 300 seamen, La Cotinière is the most important fishing port in the Nouvelle Aquitaine region. The quality of fishing and catching is what makes the village so famous. The Maison Marthe has a very constructive relationship with the fishermen's cooperative of the Ile d'Oléron and receives first class products.
What is special about Maison Marthe's work is that the fish fillets are crumbled by hand to refine the meat and preserve the pieces. The fillets are not shuffled, as is customary in canneries, for faster processing.
Maison Marthe always works with fresh herbs, which is a real advantage over dried herbs or powdered sauces. You always get the whole herbs and remove the stems that bring too much bitterness to keep only the leaves (tarragon, dill, sage, fennel...). This is very tedious and manual work, but it brings with it a great deal of added value in terms of taste.
