A true one-of-a-kind

We all know cherries in brandy, but much less so in vinegar, and believe us, it really is worth the detour.

This osmosis between the delicious Banyuls vinegar, with its aromas of red fruits, and the beautiful Ceret cherries is an exquisite delicacy.

Our advice for gourmets: A perfect marriage as an aperitif with a good country terrine, with a raclette, hot with a duck or goose magret.

Nathalie Lefort has conjured up a special delicacy by pickling ripe cherries from Céret in red Banyuls vinegar.

Refined with spices, they go well with cold cuts, terrines, pies, meat and game.

The Banyuls vinegar is made from one of the best French sweet wines and traditionally matures in barrique barrels and demijohns under the southern French sun.

Pickled cherries are versatile and will keep in the fridge for up to a year once you open the jar.

Manufacturer

The Vinaigrerie la Guinelle is managed by Nathalie Heere and has existed since 1999. It all started with Nathalie's passion for Banyuls wines. At first she was often laughed at when she said she wanted to make vinegar, but Nathalie stuck to her idea. In 1999, she acquired the small estate "La Guinelle" at the foot of the Pyrenees and made it the laboratory and headquarters of her vinaigrette, the last of its kind in France. Here fine vinegars are made from Banyuls wine, one of the best sweet wines in France, using traditional artisanal methods. Meanwhile, La Guinelle has built a solid reputation, supplying the best chefs in the country and beyond.
