The Tripoux d'Auvergne (veal tripe) is a regional specialty from the mountains of central France (Auvergne and Cantal).

It is a thin veal roulade from the veal stomach, stuffed with carrots, leeks, celery, onions, pork, beef) etc... (see ingredients).

Heat on a low flame or gratinate in the oven. Serve with boiled potatoes, mashed potatoes, rice, pasta, etc.
