Goose gizzards from Périgord

Goose gizzards are larger, more tender, and melt-in-the-mouth than duck gizzards. They also have a more delicate flavor and are less rustic. They are ideal for a Périgourdine salad, but can also be served as a main course in a red wine sauce.

Not only do they impress with their great taste, they are also low in fat and rich in proteins.

The confit process makes the muscle nice and tender and the Gésiers almost melt on the palate.

Preparation tips: The goose gizzards are already fully cooked and therefore do not need to be heated up. You can eat them cold, eg cut into thin slices. But they also taste very good if you let the fat melt, briefly fry the duck stomachs in a pan and deglaze with a good vinegar. You can then add it to the vinaigrette for the salad, which tastes good as an accompaniment.
