APPLICATION TIPS
Soak the flageolets in cold water for about ten hours. Then cook the green flageolets in plenty of simmering salted water for about an hour until tender. Plan on 3 parts water for 1 part legumes.

The flageolet bean is a variety of the common bean that originated in France. The flageolet is picked before full maturity and dried in the shade to preserve its green colour. The bean is small, light green and kidney-shaped. The texture is firm and creamy when peeled and cooked.
