The farm "La Ferme des 3 Rois" in Puiset, Eure-et-Loir, has been run by the Desforges family for five generations. Jean-Louis Desforges grew grain until 2018, before handing the 142 hectare farm over to his sons Jérémy and Jonathan. After three years they transformed this into a certified organic farm.

Cooking the flageolets with soaking

Allow 60-80 g of flageolets per person.
Soak the flageolets in at least three times the amount of cold water for about 12 hours and then rinse.
Place the flageolets in a pot and add five times the amount of water.
Bring to a boil and then reduce the heat.
Simmer over low heat for about 1 to 1.15 hours.
Tip: A pinch of baking soda speeds up the cooking process and promotes digestion at the same time.
