Duck gizzards from Périgord

Confit duck gizzards are a special specialty from the Périgord in south-west France. Not only do they impress with their great taste, they are also low in fat and rich in proteins. The confit process makes the muscle nice and tender and the Gésiers almost melt on the palate.

Preparation tips: The duck stomachs are already fully cooked and therefore do not need to be heated up. You can eat them cold, eg cut into thin slices.
