Manufacturer

All products brewed with passion by Château Bellevue.
We are Corinne and Philippe and in the heart of Bearn in south-west France, at Château Bellevue, we breed ducks in the heart of the countryside and prepare delicious products, including the best-known specialties of the south-west.
Château Bellevue, in a few words...
We wanted to create a healthy environment that encourages the sensible breeding of ducks. Our ducks are raised outdoors, fed on locally grown grain free from pesticides and GMOs (Genetically Modified Organisms) and free from animal meal.

The farm is divided into two parts:
Our farm is on a human scale with all the resources of a typical Southwest farm. We raise a few hundred ducks from their first days, as well as a few chickens, surrounded by the inevitable cats and farm dogs. We also grow the grain that is used to feed the poultry.

The farm is in the process of converting to organic farming and has stopped using pesticides for two years. We also grow the vegetables used in the house recipes.

There are even a hundred beehives that produce an incredible honey that varies with the seasons.

The second activity is that of culinary preparation. In an impeccable workshop, the whole team cuts, trims, cooks, preserves... There is also a state-of-the-art canning factory to fill jars with the best of the Béarn region, particularly its famous confits, cassoulets and other cooked dishes.

On the farm, the days are dedicated to tending the fields, the vegetable garden, the orchard and the meadows where the ducks live and looking after the ducklings. In the cannery, every day is dedicated to the preparation of a different specialty.

The Château Bellevue is a medical-social establishment of the Adapei 64 (association of parents and friends of people with intellectual disabilities from the Pyrenees). It accommodates 92 disabled workers who have difficulty entering the world of conventional work by offering them an adapted structure within a farm.

In this way, the Château Bellevue complex fulfills the tasks of the Adapei 64 association and meets the needs of the people who live there.

Local produce, quality work at Chateau Bellevue
Pesticides have not been used at Chateau Bellevue for two years, soon they will be certified organic. In terms of quality, the products are certified IGP Sud Ouest (Protected Geographical Indication) and are therefore subject to precise specifications at every stage of production.

Chateau Bellevue immortalizes its unique know-how and respect for the gastronomic tradition of the South West in its recipes.

Since the products are IGP (Protected Geographical Indication) certified, the entire company is subject to strict regulations at every stage of preparation. The same applies to the feeding and free-range husbandry of the ducks: they are fed with GMO-free grain and without animal meal.

Confits, ready meals and duck charcuterie are prepared with precise know-how. Each duck is hand cut to ensure beautiful, intact pieces. The different duck cuts are then assigned to the workshops responsible for processing the product.
