Garbure (from Occitan garbura, cabbage soup with goose or duck confit), is a cabbage stew with pieces of vegetables that is traditionally found in the cuisine of Gascony in southwest France.
Let yourself be tempted by our traditional duck garbure recipe. This wholesome dish consists of fresh vegetables and duck top wings, which are refined with pork bacon.

    The love of taste and cuisine is passed down from generation to generation in the Sajous family. Pierre Sajous did not deviate from this rule. He trained as a butcher at a young age. In his professional debut he was trained by Guy Filhol, a master butcher. In 1987, Pierre Sajous set up as a butcher in Argelès-Gazost in the Hautes-Pyrénées.

    Pierre Sajous is a passionate butcher. After 28 years of practice, he decided to set up his own business in Beaucens, where he processes pork and, in addition to fresh meat, produces homemade sausages, canned goods and ready meals.
    As a craftsman, cook and salaisonnier (manufacturer of cured products), Pierre Sajous processes raw materials that largely come from producers and breeders in the region. His creations are in high demand by many famous chefs.

    “Everyone in my family does “in flesh” – it’s passed down from father to son. I took this path very young and completed training as a butcher straight after school. I found my true calling later when I worked as a butcher-caterer under the maître charcutier Filhol. Since then I have been involved in butchery, making sausages and cooking.

    The Southwest and Bigorre, to which I am very attached, have a strong agricultural and culinary tradition. I express this wealth and this identity by using only regional ingredients of the highest quality: black Bigorre pigs, heavy fattening pigs from the Duroc-Landrace cross, beans from Tarbes, ducks from the Périgord...

    My studio, with its own butchery, processing workshop and preservation and finishing facilities, is located in Beaucens, on the edge of the Gave de Pau and near the Val d'Azun, where two of the most beautiful valleys of the Pyrenees are located, the valley of Cauterets and that of Meet Gavarnie.

    Delivery times

    Unless a different deadline is specified in the respective offer, the goods will be delivered within Germany (Germany) within 5 to 7 working days.

    Where do you ship to?

    Delivery is currently only in Germany and Austria.

    With which shipping service provider do you ship?

    We currently only work with UPS or DHL. You will be asked to select a delivery method during the ordering process.

    How long does it take until I receive my order?

    That depends on where you are. Orders to Germany take 3 to 5 working days to arrive. Delivery details will be provided in your confirmation email.

    How can I track my order?

    After your shipment has left our warehouse and has been scanned by the carrier, you will receive an automatic e-mail overnight with tracking information.
