Vinification: Manual harvest, chilling of the grapes, no destemming, soft pneumatic pressing. After pressing, the wine was fermented at a controlled temperature in French oak barrels. The wine was then transferred to new French oak barrels, where it remained in contact with fine lees and regularly stirred for 11 months before being clarified, decanted and bottled.
