Domaine Roche extends over 20 hectares of land planted with vines averaging 50 years old, with very deep roots that allow them to take the best of the soil and express it in the wine.
The vineyards are located in the south of the Rhône Valley, in Cairanne, on a clayey and calcareous terroir. The wine grows partly on the “Garrigues” plateau, whose soils are made of red clay pebbles, ideal for the cultivation of Grenache and old Carignan, and partly on the “La Montagne” terroir, a hilly landscape with white limestone and limestone Clay soils and a southern exposure ideal for growing Syrah. The harvest is done exclusively by hand and the selection already takes place on the vine, so that really only the perfect grapes are used for wine production and there is as little contact as possible with damaged grapes.
Each plot is vinified individually: the Grenache in thermo-regulated concrete tanks, the Syrah and Carignan in thermo-regulated stainless steel tanks.
The fermentation lasts between 20 and 25 days and takes place at temperatures between 24 and 26 °C. The subsequent aging extends over a period of 6 to 8 months: the Grenache in cement tanks, Syrah and Carignan in stainless steel tanks.
