Jean de Luz's brandade is a twist on the French classic, with mashed potatoes and cod stockfish, pleasantly seasoned and finished with crème fraîche and olive oil. With this dish you can literally taste the naturalness of the ingredients. Refinedly rounded, authentic and unadulterated in taste, the individual ingredients combine to form a perfect composition. Every spoonful here evokes memories of the coast.
Tip: You can also form small dumplings from the brandade and roast or deep-fry them. They taste like Spanish tapas, which is a really nice thing, especially in summer with a crunchy salad...!
