The borlotti bean is originally an Italian bean variety with a nutty aroma, delicate flavor, and creamy texture. It has a thin, tender skin and a slightly sweet taste.
Preparation:
- Soak for 12 hours
- Cook for 60-90 minutes (or 40 minutes in a pressure cooker)
- Calculate 60-80g per person
- Add salt at the end
- Herbs such as thyme, oregano or savory improve taste and digestibility
- Baking powder shortens the cooking time and makes the beans more digestible
Cultivation:
The organic borlotti are grown on fertile clay soil using organic farming methods. After harvesting, they are mechanically sorted and stored in ventilated silos with CO2 inertization.
Use:
As Italy's most important legume, it is a staple of Mediterranean cuisine, especially in Italy, Greece, Portugal, Spain, and Corsica. It is excellent in salads and various Mediterranean dishes.
