Ruby red in colour, fresh and fruity-berry, spicy and elegant in taste with velvety tannins and very balanced
The vines for this extraordinary wine come from Quinta das Bágeiras vineyards that are over 60 years old. Fermentation takes place in open “lagares” (granite tanks) for a week, processing the grapes without destemming. The “reassembly” then takes place, during which the wine is circulated during the fermentation process. This happens several times a day until a perfect density is reached. The subsequent fermentation continues in old used barriques. The wine then clarifies naturally by remaining in the same barriques for 18 months and the turbidity slowly settles. The bottling of the wine is done without any clarification or fining and the entire process is done by hand. Due to the complex process, this top wine is only produced in years of exceptional quality.

With minimalism in production and in harmony with nature, high-quality wines of excellent quality are currently being created here under the scepter of Mário Sergío Alves Nuno. On 17 hectares of cultivation area, he produces white wine, sparkling wine and red wine with a unique character and a wealth of flavor nuances.

Always very concerned about the quality and character of his wines, Mário Sergío relies on strict yield limitation and, for his red wines, on barrel aging for several years, which is complex but definitely worth it. Natural and long-lasting wines, characterized by a mostly clay and calcareous soil, hundred-year-old Baga vines and a vintage that is still carried out by hand are part of the recipe for success. The wines of the Quinta das Bageiras start their fermentation without the addition of added yeasts from the laboratory and the espumantes (crémants) are created without the so-called "dosage", a wine and sugar solution that is traditionally added to the sparkling wine to regulate the sugar content.
As a special feature of his red wines, he has retained the classic fermentation of the grapes with the grappa, the stalks. Mário Sergío explains that his harvest is so well matured that the tannins in the wood are ripe and not biting and green. In addition, the grapes are still traditionally mashed with their feet in open vats, as in Burgundy, and then fermented. The red wines are produced exclusively from the finest Bairrada variety, the Baga vine. This is how natural products are created at the highest level, which are highly convincing in terms of quality and taste.
In addition to his white and red wines and the hand-shaken champagne sparkling wine, he also produces an excellent grappa and a highly awarded and extraordinarily fine and aromatic brandy in his own small distillery.
